Cottage cheese pancakes only contain 3 simple ingredients: cottage cheese, eggs, and flour. If you're looking for a specific type of flour to use feel free to sub it out for all-purpose flour.

These pancakes are not your typical pancake made with flour, buttermilk, and eggs. The cottage cheese gets processed in a food processor until it's smooth and it almost resembles buttermilk. A blender will work as well if you don't have a food processor. They are low carb and keto-friendly if a specific type of flour is used. PLEASE BE PATIENT WITH THESE PANCAKES. They can take a while to cook on each side and might not look like they are done. Use a medium high heat and spray the pan each time.

Find a good sugar-free maple syrup to top the pancakes off with. Lankato Sugar-Free maple syrup is a good brand or so is Maple Groves Farm Sugar Free syrup which can be found at Target or Wal-Mart.

What Ingredients do I need for Cottage Cheese Pancakes?

Cottage Cheese - Any brand of cottage cheese is fine. If you’re from the Midwest I like Cass Clay or Good Culture brand from Target is great too.

Eggs - always use large eggs, warm temperature eggs are better for blending and baking

Flour - The original recipe calls for purpose flour. Please feel free to use a specific flour for certain diets and figure out the conversions on your own.

How to make Cottage Cheese Pancakes

In a food processor pulse the cottage cheese until smooth. Add in the egg one at a time and then the flour until everything is well combined.

Heat a non stick skillet and spray with cooking spray. Cook each pancake on one side until you see those little bubbles and then flip. They take about 2 minues per side.

Serving Size: 1 pancake
