What do the holiday’s mean to you? To me its family, tradition, togetherness, and FOOD! One of my earliest memories of the holidays is doing the Christmas baking with my mom. I always loved that she didn’t just bake a batch of cookies. For us, it was about making all sorts of treats that we would dream about all year until Christmas rolled around again. Some of our favorites have always been classic chocolate chip cookies, brownies, chocolate dipped peanut butter sandwich crackers, chocolate dipped pretzels, and puppy chow. We would snack on that delicacy all season long!

Just in time for the holidays and all of that baking, Pompeian has come out with a new {and really cool} cooking spray. Pompeian Grapeseed Oil Spray is a light, all-natural cooking spray with a high smoke point. So important so your food doesn’t burn from over heating the oil. It is made from 100% grapeseed oil imported from France, Pompeian Grapeseed Oil Spray can be used whether you are stir-frying, grilling, sautéing or baking. Since having kids, I have been increasingly aware of what we buy to put in our bodies, so it is big points with me that it is all natural.

Not much has changed in all of these years for me. I still like to load down the kitchen with more sweets and treats than our family could eat in about three years. I have added and reinvented several of the items we bake though the years though. One of my newest loves is Peppermint Crusted Brownies. There are a couple of reasons I love it. 1. It is absolutely DELICIOUS! 2. It is so quick and easy to make, I can whip it up in no time for a last minute party or gift. Plus, that also makes it really easy for the kids to help, and there is no question my 3 year old will want to be involved in any brownie making activities that are going on at our house.

All you need for the brownies is a box of brownie mix {I use Ghirardelli}, plus the ingredients to make it {Water, oil, eggs usually} and about 24 candy canes.

Make the brownies as directed on the box.

Grease an 8×8 pan withPompeian Grapeseed Oil Spray and pour the brownies into it.

Put the candy canes into a baggie and crush them up. This is perfect to let the kids help with. My kids always love to break stuff! You really want to crush the candy canes more lightly because all of the finer pieces will melt when baking, while the larger pieces will stay in tact.

Pour half of the mixture on to the top of the brownies evenly spread.

Bake according to package directions, usually around 325 for 40-45 minutes.

Once they are done, immediately spread the remaining peppermint on the top evenly. Press lightly if needed. Let them cool a few minutes and then cut them and with a plastic knife. As the brownies cool the melted candy cane will harden a bit to create the fabulous crust on these brownies.

Ingredients

  • 1 8 x8 box brownie mix
  • 24 Candy Canes
  • Pompeian Grapeseed Oil Spray

Instructions

  • Make brownies as directed on back of box

  • Spay 8x8" pan with Pompeian Grapeseed Oil Spray and pour in brownies

  • Unwrap candy canes and place them in a bag and crush them

  • Layer half of the candy canes on top of the brownies

  • Bake according to package directions

  • Remove from oven and immediately sprinkle remaining candy canes on top.

  • Let stand for 3-5 minutes then cut with a plastic knife and serve!
