This garlic truffle fries recipe is decadent, delicious, and so easy! Make these fancy fries right at home using your oven. They're vegan and gluten-free!

Some flavors are just a perfect combination. Salty french fries with rich truffle oil (and a glass of champagne), is one of those perfect combos!

These garlic truffle fries are so easy and delicious. Make them right at home using your oven! Toss the potatoes with some olive oil and truffle oil, roast, then sprinkle with salt and (vegan) parmesan cheese! A perfect restaurant-quality meal from home!

I love to serve these salty truffle fries with a hearty salad like Kale Salad or Arugula Salad. These would also go great with Portobello Steak au Poivre!

  • Russet Potatoes - I don't recommend substituting for any other form of potato. If you wanted to use something like a parsnip or yucca, that would probably work.
  • Truffle Oil - I used black truffle oil. You could also use truffle salt, white truffle oil, or another type of truffle-flavored product.
  • Garlic - Minced fresh garlic works the best!
  • Parmesan - I used grated vegan parmesan from Violife. You can use another brand of vegan parmesan or you can use real parmesan, or just omit entirely.
  • Parsley or Chives - I think either of these herbs makes a great garnish! Green onion would be great too.

How to make this recipe

Step 1: Prepare the Potatoes

Begin by scrubbing the skin of the potatoes with water to remove any dirt. Peel the potatoes if you don't want skin-on french fries (I left the skin on mine).

Use a sharp knife to carefully cut the potatoes into fry shapes.

Slice the potatoes down the middle, longways. Then, take each half of the potato and slice in half again, so that you have one flat potato panel and one rounded piece. Next, slice each of the 4 pieces into long strips. Refer to this video for fry-cutting technique.

Once all of the potatoes are sliced, place them in a large mixing bowl and cover with cool water. Let sit for 30 minutes.

Meanwhile, mince the garlic cloves, chop the parsley, and grate the cheese.

Step 2: Bake the Fries

Pre-heat the oven to 400º Fahrenheit.

After 30 minutes, remove the sliced potatoes from the water and pat them dry, thoroughly.

Add the dried potatoes back to a (dry) mixing bowl, then add olive oil (or another neutral oil), the truffle oil, and the minced garlic. Toss until very well combined.

Line a baking sheet with parchment paper, you may need two trays.

Dump the fries onto the baking sheets, and spread them out as much as you can so that no fry is on top of another fry.

Place in the oven and bake for about 20 minutes, until golden brown.

Step 3: Finishing Touches

Once the fries are done baking, remove from the oven and immediately sprinkle with salt (or truffle salt!)

Let them cool enough to touch, then serve in a bowl, garnish with parsley and vegan parmesan!
