Fall is near, and for many of us, that means that casseroles will once again take center stage on our dinner tables.

I don't know about you, but I LOVE a tasty casserole.

To me, they work year-round, but especially when the weather starts to cool. There are few things I love more in the evening than knowing that dinner is made and all I have to do is pop it in the oven.

Though you may associate casseroles with potatoes, pasta, and other carb-heavy ingredients, it is easy to make casseroles keto. Today I thought it would be fun to share a collection of the VERY BEST Keto Casseroles!

Frequently Asked Questions About Making Keto Casserole Recipes

What is a casserole?

A casserole can refer to the actual dish that the food is cooked in, but in this case, we are referring to the food itself. In some parts of the country, it can be referred to as a covered dish and in others a hot dish. Casseroles reigned supreme 1950s, which was about the same time that canned soups became popular. They were and are a quick and easy way to get dinner done fast!

Television personality Alton Brown once said that a casserole is made up of the following formula.

1-2 Main Ingredients + Starch + Aromatics + Seasoning + Binder.

For the sake of being keto-friendly, we simply omit the starch here and make sure that the binder is a low carb option. (Or omit the binder.)

Is it ok to use pre-shredded cheese on keto?

Many of these dishes call for shredded cheese. I don't recommend buying the pre-shredded kind. First, they are coated with ingredients that help prevent the cheese from sticking together. Most of the time these ingredients add carbohydrates to the cheese. Not only does shredding the cheese yourself save money (and carbs!), but the cheese also tastes better. I shred multiple blocks at a time and keep it in a zip-top back in the refrigerator.

Are canned soups keto-friendly?

If you are looking to convert your favorite casserole recipes to a keto-friendly version, one of the most common questions is if you can use canned soups on keto. In most cases, you cannot. Not only is the carb count too high, but most of them also contain unhealthy ingredients such as MSG, partially hydrogenated fats, and high fructose corn syrup. Recently Kettle and Fire come out with a Broccoli Cheddar soup that is keto-friendly. Beyond this, make sure you read labels carefully. (And if you find a canned soup that is low carb please leave a comment so we can all try it!)

What type of dishes are best for cooking casseroles?

Ovenproof glass, porcelain, earthenware, enameled cast iron, and oven-safe skillets are all great options. They all go from freezer to oven without an issue, but most glass, porcelain, and earthenware cannot be used on the stove-top. (By the way, remember to let cold glass, porcelain or earthenware dishes warm up before placing them in the oven. Alternatively, put them in a cold oven and let the oven and dish warm-up together.) Dish dimension can make a difference in baking times, so adjust accordingly.

What is the best way to clean a dish that has baked-on food?

I doubt there is anyone out there who hates scrubbing as much as I do.

If you do need to scrub a dish, I recommend letting it soak in warm soapy water first. Alternatively, if the dish is stove-top safe, you can put some vinegar and water in it and bring it to a boil. This will help to loosen baked-on food.

Can these keto casserole recipes be made ahead of time?

Most casseroles can be made and refrigerated for several hours, or up to a day or two ahead of time. Always consult the recipe for instructions. (And don't forget my note about letting a cold dish warm before placing it in a hot oven.) You should never let food sit at room temperature for more than two hours, so if you aren't planning on eating soon always refrigerate!

Can you freeze these recipes?

Many can be frozen, and a lot of recipes will give specific and tested instructions. To freeze a casserole, make sure you wrap it very well or it can get freezer burn. Freezer burn can happen when food has simply been in the freezer too long, but it also happens a result of dehydration that comes from food being improperly packed.

To freeze a casserole, let it cool completely. Cover it with plastic wrap, parchment paper, or waxed paper, an then foil.

Tip

Don't forget to label the dish with the recipe name, date, and reheating instructions. It is also a good idea to keep a running list of what you have in the freezer. I have a garage freezer and I keep a magnetic list on the door of it so I don't forget what I have.

To thaw casseroles, it is best to place them in the refrigerator overnight. Assuming it is in a microwave-safe container, you can use the microwave, but it isn't ideal because microwaves tend to thaw foods unevenly.

To make sure a previously frozen casserole is properly heated, I like to use an instant-read thermometer. The internal temperature should be 165 degrees Fahrenheit.
