Sometimes I do not have time to stand at the stove and make sauteed green beans and potatoes in a skillet. Doing a little prep and adding these vegetables to the oven and spend the time making the rest of your dinner.

Just add the seasoning to the potatoes and bake. Add the seasoning to the green beans while the potatoes are in the oven, by the time the beans are cleaned and seasoned, they can be added to the sheet pan. Bake a little longer and enjoy.

Sometimes, I can find a one pound bag of baby potatoes in the grocery stores that look really fresh. Be careful not to purchase them if they have a lot of brown spots or sprouts growing out. That means that they have been sitting on the shelf for a while.

Get Delicious Taste From a Few Simple Ingredients

This simple recipe lets the true flavors of the ingredients shine through. For best results, choose fresh ingredients. They really do taste better in this easy quick side dish.

Potatoes. Any kind of potato works for this recipe. I do love fingerling potatoes, they are one of my favorite ingredients. Yukon gold or red potatoes are the best, but I have used russet potatoes too. Really any kind. Just clean them and cut them into 1-2-inch pieces for quick and even baking.

Olive oil and Butter. I like to use olive oil for the potatoes and melted butter for the green beans in this recipe. However, you could use melted butter rather than olive oil in this recipe. Any other oil you prefer works well too. You could easily turn this into a vegetarian recipe by eliminating the butter and just using olive oil.

Seasonings. This great recipe has simple seasonings, garlic powder, dried parsley, salt, pepper, and paprika. If you prefer, you can also add Italian seasoning or other herbs that you enjoy the taste of.

Green Beans. Fresh is my first choice, fresh whole green beans, next is frozen for this recipe. They just bake up so much better for looks, flavor, and texture in this recipe than canned beans do.

Variation to Using Oil or Butter

A nice lady on a social media post commented that she used bacon grease for a recipe similar to this. While I have yet to try it on this sheet pan recipe, I have used bacon in a sauteed green bean recipe and that is delicious too.

How to Make Roasted Potatoes and Green Beans

Wash and scrub the potatoes and cut them into 1–2-inch pieces, if you use small potatoes you will save the step of having to cut them up. Add the potatoes to a large bowl along with the olive oil, garlic powder, dried parsley, salt, black pepper, and paprika. Gently mix to combine. Place potatoes on a half sheet pan and bake for 20 minutes at 425 degrees Fahrenheit.

Save Time: While the potatoes are baking, clean and wash the green beans. I like to cut them into 1-2-inch pieces as well. Place the beans in a large mixing bowl and add the melted butter, garlic powder, salt, and pepper. Gently mix to combine.

After the potatoes have been baking for 20 minutes, remove from the oven and add the green beans on top. Spread the beans and potatoes around so that they have enough room to bake. Place back in the oven and bake another 20 minutes.

One more thing I forgot to mention. Sometimes I make this and cut up a few medium onions, we love to have onions when we make fried onions. So when making this easy supper recipe, I will add red onion when the green beans are added.

Roasted Green Beans and Potatoes Recipe Tips and Tricks

Preparing the Potatoes. I wash the potatoes with water and scrub the dirt off. If there are any blemished areas, I cut those off. Then make sure to cut into 1-2-inch pieces. This helps them cook at the same rate and the smaller that the potato is, the faster it will cook.

Preparing the Green Beans. I wash the beans with water and use a scissors to snip off each end of the bean. This gives them a more uniform look. I will also make sure that the beans are in lengths of about 2-inches. Again, having the uniform size helps them cook evenly and I think it is easier to eat them.

Baking Sheet. Because this is quite a bit of food to bake, I like to use a half sheet pan for this recipe. If you do not have one of those a large baking sheet will work just fine. You could even use a few large oven-safe large saucepan for this recipe. There is lots of room for the potatoes and beans to spread out on for better roasting. For easy clean up, you could line the baking pan with tin foil.

Tin Foil Grill Pan. If you want easy clean up, use a tin foil pan to bake this side dish.

Can The Potatoes and Beans be Frozen?

Yes. Just make sure that they are sealed well in an airtight container. They will keep in the freezer a few months. When you are ready to enjoy, just thaw before reheating.

The best part is that you just have to take this out about 30 minutes before popping into the oven. It is amazing how nicely the limp looking thawed potatoes and green beans perk right up in the oven.

If you do have any leftovers, they are easy to store in an airtight container. They will last in the refrigerator up to 5 days.

When you are ready to reheat them, they can be microwaved a few minutes until hot. Or if you want o crisp the potatoes up again, place back in the oven for 15 minutes. A bit faster method is to heat them in a non-stick pan on the stovetop with a bit of butter. Easy and delicious even the second time around.
